Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
Mix Wet Ingredients: In a large mixing bowl, combine the melted butter and eggs. If using vanilla extract, add it now. Mix until well combined.
Add Cake Mix: Gradually add the red velvet cake mix to the wet ingredients, stirring until a thick dough forms. Make sure there are no lumps of dry mix remaining.
Fold in Chocolate Chips: Gently fold in the white chocolate chips or chunks until they are evenly distributed throughout the dough.
Scoop Dough onto Baking Sheets: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the cookies are set and the edges are slightly crisp. The centers may look a bit soft, but they will firm up as they cool.
