These Impossibly Soft, Fudgy Red Velvet Cookies Are All We Want for Christmas

– 1 box red velvet cake mix – 1/2 cup (1 stick) unsalted butter, melted – 2 large eggs – 1 cup white chocolate chips or chunks – 1 teaspoon vanilla extract (optional) – Powdered sugar, for dusting (optional)

Ingredients

Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

Mix Wet Ingredients: In a large mixing bowl, combine the melted butter and eggs. If using vanilla extract, add it now. Mix until well combined.

Add Cake Mix: Gradually add the red velvet cake mix to the wet ingredients, stirring until a thick dough forms. Make sure there are no lumps of dry mix remaining.

Fold in Chocolate Chips: Gently fold in the white chocolate chips or chunks until they are evenly distributed throughout the dough.
